Hello everyone, as you all know. Have been struggling with my weight for about 11 years now and it's time to take control of what I need to do. My fabulous friend Sheryl started the paleo plan like 6 months ago and has lost over 60 pounds already. You can follow her blog too. QUICK & EASY IRISH WHISKEY CAKE

QUICK & EASY IRISH WHISKEY CAKE

1 pkg. yellow cake mix
1 pkg. instant vanilla pudding mix
4 eggs
1/3 c. Irish whiskey (Jameson's or Paddy's)
1/2 c. cold water
1/2 c. oil
3/4 c. chopped walnuts

1. Blend all ingredients in a large mixing bowl.2. Beat well for about 3 minutes.
3. Grease a 10" tube or bundt pan.
4. Bake at 325 degrees for 1 hour.
5. Set on rack to cool.
6. When cool, glaze with following mixture. GLAZE: Melt 1/4 pound of butter in saucepan. Stir in 1/2 cup of water and 1/2 cup of granulated sugar. Boil for about 3 minutes, stirring constantly. Remove from heat and stir in Irish whiskey. Pour over cake.

Well today has been super hard as the guys from work bought pizza for everyone. I was good and didn't have any but it was hard. I have slacked the exercise part but promise to start tonight. Keep me in your prayers and good thoughts everyone.

Hawaiian Pita Pizzas

Hawaiian Pita Pizza

Ingredients

2 pieces whole-wheat pita bread
2 tablespoons olive oil, divided
2 cups low-sugar pizza or pasta sauce, divided
1 tomato, sliced thinly
8 slices deli ham, cut into fourths
1 (6 ounce) can pineapple chunks, drained
1/4 cup low-fat shredded mozzarella cheese

Preparation

Set oven to broil. Brush pita bread with olive oil, put on a baking sheet and broil four inches from the heat for two minutes. Remove from oven. Spread a cup of pizza sauce over each pita and top with equal amounts of tomato, ham and pineapple. Sprinkle with cheese. Return to oven and broil for three more minutes or until cheese is melted.

Day One Body for Life

Years ago recommended by my doctor I started a program called Body for life. Its a 12 week programs that incorporates fitness and good eating habits into your life. I did this for only 9 weeks and at the end of that I had lost 10 pounds and 24 inches over all and I felt great. I quit then cause I thought I could do it on my own. Now once again I am struggling with my weight. I have tried all these diets and nothing works so as doctor recommended I am going back to what has worked.

Today is day one. I have had a good day and it hasnt been to hard unlike last time I never thought I would get through those first 2 weeks.

I have weighed and measured and took my pictures and yes its time for me to do something.

I am super excited about this.

Me, Myself and I

I have been thinking of my self lately and what kind of woman I am and what kind of woman I want to be. I want to be the woman who has all the Patience in the world. I am not this woman. In fact most people will tell you that I am very impatient person. I want to be active and athletic and yet I am fat and lazy. I want to be involved in all the things at my kids school like my fabulous friend Sheryl. I am not.
Summer is now here and even though I have to work and wont actually get a summer I have decided that this summer I am going to work more on being the woman I want to be and not so much of the woman I am. I figure everyone has areas they need to work on and these are mine. I know this may not be easy but I am ready.

Just a little history on Hera is:

The first encounter between Hera and her husband Zeus, king of all the gods, was in the region of the Hesperides. Hera was not responding to his attempts to seduce her so he resorted to trickery that appealed to Hera's nurturing side. It was winter and Zeus turned himself into a cuckoo that appeared to be frozen from the cold. Hera, feeling sorry for the bird turned to her motherly instincts as she held the bird tightly to her breast to warm it. Zeus then turned himself back into his normal shape and took advantage of the surprised state Hera was in. Unable to fight him off, Hera was raped and then persuaded to marry him to cover her shame.

I found this so neat to find out and give me some perspective on myself.

Ingredients

Tomato & Avocado Salsa, (recipe follows) or store-bought fresh salsa
3 tablespoons all-purpose flour
1/8 teaspoon ground cumin
1/8 teaspoon salt
1/8 teaspoon cayenne pepper, or to taste
1/3 cup beer
8 ounces tilapia fillet, cut crosswise into 1-inch wide strips
2 teaspoons canola oil
4 corn tortillas, warmed

This recipe calls for:

Tomato & Avocado Salsa

Preparation

Prepare Tomato & Avocado Salsa, if using.
Combine flour, cumin, salt and cayenne in a medium bowl. Whisk in beer to create a batter.
Coat tilapia pieces in the batter. Heat oil in a large nonstick skillet over medium-high heat. Letting excess batter drip back into the bowl, add the fish to the pan; cook until crispy and golden, 2 to 4 minutes per side. Serve the fish with tortillas and salsa.

Being all that I can be

I have recently struggled from depression and my husband pointed out that he thinks my pills I have been on for a couple years are not working anymore. I think he maybe right. I made an appointment with a new doctor to be checked out. I am also going to talk to him about my weight. The last doctor put me on diet pills and I just don't feel that is the right way to go about this. I love my life so I know that when I cant shake the negativity and I question everything that obviously something isn't working right.
I also have always wanted to be like super mom and be able to have my career, attend PTA meetings and still have dinner on the table every night. Lately I feel like all I can do is my career. Anyone have any advice on how to help me get more energy?

Smoked Salmon on Irish Soda Bread with Chive Butter

Ingredients

1 loaf Irish Soda Bread, recipe follows
1 stick butter, softened
1 tablespoon chopped chives
8 ounces smoked salmon, sliced
Fresh dill, for garnish

Directions

Slice the soda bread into thin slices, about 1/4-inch, and cut each slice into a rough 2-inch square until you have 16 pieces. Wrap the remaining bread in plastic wrap and store in a cool dry place. Mix the butter and chives together and spread a small amount onto each square. Top with a small fold of salmon and garnish with a sprig of fresh dill.

Irish Soda Bread:

1/2 cup oatmeal
1 1/2 cups all-purpose flour
1/4 cup sugar
3/4 teaspoon baking soda
1 teaspoon salt
1 cup raisins
1 tablespoon caraway seeds
3/4 cup buttermilk

Preheat the oven to 375 degrees F.

Put the oatmeal into the bowl of a food processor and pulse until finely ground. Pour into a bowl and add the flour, sugar, baking soda, salt, raisins and caraway seeds. Stir well to combine. Pour the buttermilk in and stir quickly until well combined. Shape the dough into a round about 6 inches in diameter and put onto a baking sheet. Place into the top half of the oven and bake 30 to 40 minutes, until lightly brown on top. When tapped, the bread will give off a firm, hollow sound. Remove from the oven and let cool.

Irish Scones

Recipe

Irish Scones
============

Makes 6 Scones

1 cup white flour 
1/2 teaspoon baking powder 
1/4 pound butter, softened 
2 ounces sugar 
1 egg, slightly beaten 
2 ounces milk 
Sultanas (white raisins) optional 
Walnut halves (optional) 

Mix flour and baking powder. Add butter, blending 
until mixture is butter-colored. Add sugar and continue 
to mix well. Add half the beaten egg and all the milk. 
Add raisins or some nuts, if desired, mixing well to 
make a sticky dough. Turn dough onto floured board and 
knead at least 5 minutes or longer. Cut dough into 
rounds and place on greased baking sheet or hot frying 
pan. Brush tops of scones with remainder of beaten egg. 
Place walnut halves on top, if desired. Bake at 350 to 
375 degrees for 15 to 20 minutes, or until brown. If 
preparing over an open fire, heat frying pan till very 
hot. Place scones in pan and cook 7 to 8 minutes. Turn 
and cook 7 to 8 minutes more.

Hello everyone, It has been a little while since I have done a personal blog post and I just wanted to let everyone know how things are going. For the most part life if going good. I have the most wonderful husband in the world who I fall in love with more and more each day. I have 4 wonderful kids. My babies are almost a year old and I dont know how that happened. LOL

My oldest is just about done with 5th grade and will be headed to middle school. That is crazy to me as well. There is my middle child who each day amazes me with how sweet and kind hearted he is. He loves things and people so much and has such a sweet heart. I am very blessed to have him.

I have a great job and some great friends.

My husband Grandma is very sick and that is hard. This is the woman who raised him and taught him everything. She helped shape him into the man he is today. This is one person who has never disappointed or lied or hurt him. He has always been able to depend on her and now she is very sick. I pray by the minute that she pulls through this.

Life is strange how it turns out and its short so love everyday and dont take anyone for granted.

Lemon Rosemary Meatball

4 servings, 3 meatballs & about 1/4 cup sauce each

Active Time: 50 minutes
Total Time: 50 minutes

Ingredients

1 medium onion, cut into chunks
2 large cloves garlic, smashed and peeled
2 teaspoons freshly grated lemon zest
2 tablespoons chopped fresh rosemary or 1 1/4 teaspoons dried, divided
1 pound 93%-lean ground turkey
3/4 cup fresh breadcrumbs, preferably whole-wheat (see Tip)
1/3 cup freshly grated Parmesan cheese
3/4 teaspoon kosher salt, divided
1/4 teaspoon freshly ground pepper, plus more to taste
1/4 cup all-purpose flour
2 teaspoons extra-virgin olive oil
1/2 cup dry white wine (or substitute more chicken broth)
1 14-ounce can reduced-sodium chicken broth
4 teaspoons lemon juice
1 tablespoon butter

Preparation

Place onion, garlic and lemon zest in a food processor. Add 1 tablespoon fresh rosemary (or 1 teaspoon dried) and pulse just until the mixture is finely and evenly chopped (but not mushy).
Transfer the mixture to a medium bowl and gently mix in turkey, breadcrumbs, Parmesan, 1/2 teaspoon salt and pepper until combined. Use a generous 2 tablespoons each to shape the mixture into 12 meatballs (about 1 1/2 inches in diameter). Place flour in a shallow dish and roll the meatballs in it to lightly coat. (Reserve the remaining flour.)
Heat oil in a large nonstick skillet over medium-high heat. Reduce heat to medium, add meatballs and cook, turning once, until brown, 3 to 5 minutes total. Transfer to a plate.
Add wine (or 1/2 cup broth) to the pan, increase heat to medium-high and cook, scraping up any browned bits, until almost evaporated, 1 to 3 minutes. Add the can of broth and bring to a boil. Reduce heat to maintain a simmer and return the meatballs to the pan along with the remaining 1 tablespoon fresh rosemary (or 1/4 teaspoon dried). Cover and cook until the meatballs are cooked through, 8 to 10 minutes. Remove the meatballs to a serving bowl.
Bring the sauce to a boil over medium-high heat and cook until reduced to 1 cup, 4 to 8 minutes. Whisk lemon juice and 1 tablespoon of the reserved flour in a small bowl (discard any remaining flour); whisking constantly, add the flour mixture to the sauce along with butter and the remaining 1/4 teaspoon salt. Simmer, whisking, until slightly thickened, 1 to 2 minutes. Strain the sauce through a fine-mesh sieve. Serve the sauce over the meatballs.

Tips & Notes

Tip: To make your own fresh breadcrumbs, trim crusts from whole-wheat bread. Tear bread into pieces and process in a food processor until coarse crumbs form. One slice of bread makes about 1/2 cup fresh breadcrumbs.

Chocolate Guinness Cake with Irish Cream Carmel Sauce

Ingredients:

2 cups all-purpose flour
3/4 cup unsweetened cocoa powder (not Dutch-process) plus additional for dusting
1 1 /4 teaspoons baking soda
3/4 teaspoon kosher salt
2 sticks unsalted butter, softened
1 1/2 cups packed dark brown sugar
2 large eggs
1 teaspoon pure vanilla extract
1 1/3 cups room-temperature Guinness or other stout beer
Lightly Sweetened Whipped Cream
For Caramel Sauce:
1 cup sugar
2 tablespoons water
1/3 cup Irish whisky such as Jameson or Bush mills
1/2 cup heavy cream
2 tablespoons unsalted butter

Directions:

Make Cake: Preheat oven to 350 F. with rack in the middle. Butter and flour an 8-inch square cake pan (2 inches deep).
Whisk together flour, cocoa powder, baking soda, and salt.
Beat together butter and brown sugar with an electric mixer until pale and fluffy. Add eggs one and at time, beating well, then beat in vanilla. Add flour mixture and beer alternately in batches, beginning and ending with flour mixture and mixing until just combined.
Pour batter into cake pan and smooth top, then bake until a wooden pick inserted in center comes out clean, 45 to 55 minutes.
Cool in a pan on a wire rack 1 hour. Transfer cake to a cake plate.
Make Sauce: Heat sugar and water in a 10-inch heavy skillet over medium heat, and cook, swirling skillet occasionally so sugar melts evenly, until it is a dark amber. Serve cake with caramel sauce and whipped cream.

Ultimate Turkey Sandwhich

2 cups white and dark turkey meat, chopped into medium-sized pieces
1 cup mayonnaise
1 cup seedless red or green grapes, halved
1 green onion, tops only, chopped fine
1/8 cup celery, chopped fine

Today I woke up and felt great. Its the first time in a long time. I found out that my vitamin D is low and that is why I have been feeling crappy and i have high cholesterol so i am on weight loss and work out plan for that and my beautiful friend Kristina is helping me out with that as we are helping to lower her high blood pressure.

I have the most awesome kids ever and I thank God every day that they are here. My husband who is so wonderful and sexy and brightens each and every day I cherish. The texts he send me the smiles he gives me and the love is more then I could ever ask for or deserve.

I have gained a bunch of weight back and I am so frustrated. I went to my doctor and he said that I needed to start eating better and working out but I feel so lost. I asked my friend to help me because she says she wants to lose weight to and they have this local 'biggest loser" club that my doctor suggested I do and its 12 weeks long and this time is already done 6 weeks but they said we could still join because we could get a lot out of 6 weeks. We decided to go and then the first week I didn't really want to go and had some other stuff I wanted to do that night and so I told her we wouldn't go and she was all for it. Everyone keeps telling me that having a backup friend is a great help but I am starting to feel like that we hold each other back. Its so easy to talk the other one into eating something yummy or not working out. OHHHH what do I do. I need some real help. Thanks all

Hello everyone I need some help. I feel so lost sometimes and lately I am dealing with such hostility and anger inside. I am not sure where its coming from. I am just so mad and irritated. My best friend recently broke up with her boyfriend which is a good thing since he was not good for her but now I find my self so mad at him that I could spit. I dont think this is a normal reaction and to top it off he wont quit contacting her no matter how many times she tells him its over he is a moron who dont get that and with every text and phone call and email she gets from him I get more and more mad. If i keep this up I am going to have a heart attack. I am also worried because I want and need to be there for her but i feel like I am ignoring my family during this time. She wants me to go hang out at her house which i love to do but in my house I am the bread winner and my husband is a stay at home dad so I am already out of the house 40+ hours a week and to leave just for fun makes me feel like a bad wife and mom and I have been trying so hard for the past year to show that I can be the best. I am so flustered and on top of that my health is going down the drain as I write this. I would love some advice any advice. Thanks ahead of time.

I need some help!!!

I need some uplifting. I feel so down and frustrated and I think its all the stress of my friends life. Which I am sure is as stupid as it sounds but I worry about her and so her stress becomes my stress and then I get frustrated because I am afraid she wont stand up for herself and she seems like she is doing good. SO the problem is me. I need to release this. Is there any kind of meditation or something I can do to help me focus on my own life and not drive her insane.

I wont touch a lot on the last two chapters as I wish for everyone to read this book as Domesticated Gypsy and I have done and of course I do not want to ruin the ending. Its a must read because this is where is sums up what happens to her boss and her job and her beliefs. This book has been absolutely amazing. I highly recommend it to all.

BAILEY'S IRISH CREAM TRUFFLES
1/4 cup Bailey's Irish Cream
1 Tablespoon Butter
12 oz semisweet chocolate pieces
2 egg yolks
1/4 cup Heavy Cream

Melt chocolate pieces, Bailey's and heavy cream together over very low heat. Whisk in yolks, one at a time, mixture will thicken. Whisk in butter. Refrigerate several hours, or overnight until firm. Make small balls with a teaspoon. Roll in powdered sugar or cocoa.

This chapter is about elements. In this chapter she talks a lot about the problems she has with her boss from everything to sexual harassment to verbal abuse and humiliation. Things that none of us should ever have to put up with in a job. This chapter also covers spells and potions and in my beliefs your frame of mind. I truly believe that a lot can come out of our thoughts and frame of mind. If we truly believe in our self we can accomplish anything. Now I don't mean this in the sense of oh I can jump off this roof and turn into a bird kind of thing.

She use protection for her self from her boss during this chapter and she did in mentally such as carving banishing pentagrams in his office door and thinking to her self that He WOULD leave her alone.

This chapter is awesome and the more I have read the book the more I like it and relate with it. This is a great book for women.

OK so this isn't really a recipe for you but yesterday i found myself at having quite a dilemma. I had incited some friends over to watch a couple movies around 5pm. I had movies for us and movies for the kids. We let the kids put down their mattresses on the floor and have popcorn and a real fun movie night. The problem that came up however was it was at 5pm and we would all need to have dinner. I didn't feel like making a huge meal for everyone but I knew that popcorn would not suffice. My friends and I talked it over for a while which they didn't care what we had they just didn't want me to go out of my way. Which is super sweet. Anyway after talking to my fabulous honey he suggested that he make Clam Chowder and then we put out snacks. Everyone loves his famous homemade clam chowder and so no one was upset. Making this for him is easy and there is a lot of it. He made that and I put out some Lil smokies, toquitos, chips and salsa, cheese and crackers, chocolate loaf cake, blueberry loaf cake, and cracker with spinach dip that was brought by one of my friends. I picked up some corn dogs for the kids who didn't want clam chowder and we had a feast and it was very easy. Maybe this will give you an idea of what to do when you need something quick.

Hello all of you fabulous people. Its my turn again to post on the fabulous Book of Shadows by Phyllis Currott.

Chapter 9 is about Drawing down the moon. In this chapter she covers the relationship between the moon, the Goddess, and women.

The cycles of the moon- waxing, full, and waning correspond to the stages in our own lives. Such as child, woman, grandmother or as she calls it premenstrual, child bearing and crone.

This for me meant a lot I have always thought of my childhood years as being non important as well as my elderly years to be down right scary. However after reading this chapter I have found that each step is important.

As a child we learn the most and go through the most physically. Our bodies change from children to young women. That time is very important for us to have fun and laugh and not know the stresses of having an adult life.

As a woman in our child bearing stage we learn the love that only a mother can have for a child.

Then as a crone we know only the love that a woman with that many years experience can.

The rest of this chapter really focuses on her life and her job as she is trying to impress her boss who is a huge jerk and treats her with no respect.

Fluffy French Toast

Now I am not a french toast eater but this you have to try.

Ingredients

1/4 cup all-purpose flour
1 cup milk
1 pinch salt
3 eggs
1/2 teaspoon ground cinnamon
1 teaspoon vanilla extract
1 tablespoon white sugar
12 thick slices bread

Directions

Measure flour into a large mixing bowl. Slowly whisk in the milk. Whisk in the salt, eggs, cinnamon, vanilla extract and sugar until smooth.
Heat a lightly oiled griddle or frying pan over medium heat.
Soak bread slices in mixture until saturated. Cook bread on each side until golden brown. Serve hot.

A Spicy Meatball yum

Ingredients

1 pound lean ground beef or turkey
1 egg
2 tablespoons water
1/2 cup bread crumbs
3 tablespoons minced onion
1 (8 ounce) can jellied cranberry sauce
3/4 cup chili sauce
1 tablespoon brown sugar
1 1/2 teaspoons lemon juice

Directions

Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, mix together the ground beef, egg, water, bread crumbs, and minced onion. Roll into small meatballs.
Bake in preheated oven for 20 to 25 minutes, turning once.
In a slow cooker or large saucepan over low heat, blend the cranberry sauce, chili sauce, brown sugar, and lemon juice. Add meatballs, and simmer for 1 hour before serving.

I have missed that at so many times in my life especially when things have been bad or I have made mistakes. I have always been a person who believed that God doesn't betray you because you make a mistake. I wondered with my new found beliefs if I would find what everyone else is finding. Then last night it happened I felt the touch of the Goddess like she was laying next to me telling that it was OK to be happy and enjoy my life and to know that God would always be with me. I thought this was so great.

OK in Chapter 6 she talks a lot about air, fire, water and earth. I found this very exciting since I am a Leo I am considered fire which I believe explains a lot about my passion and attitude.

She talks about how spirituality is about everything natural and loving and being at peace with the earth. The natural world is holy.

She talks about how symbolic items can really help to tap into your spirituality, and help you focus.
It channels your energy, into specific intention.

I really recommend you read this book if you haven't and as always I welcome input.

BBQ Pork

Check out this pulled pork recipe for sandwiches

Ingredients

1 (14 ounce) can beef broth
3 pounds boneless pork ribs
1 (18 ounce) bottle barbeque sauce

Directions

Pour can of beef broth into slow cooker, and add boneless pork ribs. Cook on High heat for 4 hours, or until meat shreds easily. Remove meat, and shred with two forks. It will seem that it's not working right away, but it will.
Preheat oven to 350 degrees F (175 degrees C). Transfer the shredded pork to a Dutch oven or iron skillet, and stir in barbeque sauce.
Bake in the preheated oven for 30 minutes, or until heated through.

Chapter Five

This chapter is called between the worlds and I really liked it. There was a lot more personal stuff about the author in this chapter and some of the issue she is dealing with at work and how she find such strength and release through her coven. They talk a lot about taking in the earth energy and then releasing it back into the earth. I think that is my problem I forget to release and then I am running around like a chicken with my head cut off who is cracked out on Prozac. Hehe that a funny thought.
I like that I learned that as a wiccan you can worship any where at any time and you don't need a holy building or priest to make you feel your connection or tell you what to believe.

I am very excited for Chapter six because it is title Air, fire, water and earth. Stay tuned

Chapter Four

Chapter four is called Magic and I really like this chapter as well as I got a lot out of it. However before I go into that I must mention that I can relate so well with the author. I also have a very important job that takes a big chunk of my time where I have to be focused on the job. I also have clients so appearance is very important in my job.

OK so anyway I think the biggest and best thing I learned from this chapter was about magic and casting spells. I like most people have always thought of witches as people who cast spells and use black magic or magic to their own benefit. I believed that you couldn’t have magic without casting a spell or making a potion. I learned that there are two primary uses of magic. High magic such as being in the present of the goddess and then there is practical magic which does involve casting spells. I also learned that the Wiccan rule is to harm no other. This isn’t about hurting others or getting revenge or getting what I want. This is about living in harmony and being one with nature. I know this might sound like a lot of world peach hippy talk but it makes so much sense to me now. I have always felt some connection to the earth and spirituality and now I understand why.

This also went on to a lady who wanted to do a love spell to find her true love which is also not how this works. I did realize myself through reading this chapter and through something my best friend has recently went through that you can’t find true love until you can truly love yourself.

This chapter is almost completely highlighted for me but I won’t go on and on in hopes that someone else will post on how they felt during this chapter.

On my closing note I will say that I am finding the more reason that people know so little about Wicca is because people are still too scared to share it because they are afraid of losing friends and family or that people will find them crazy.

Cheese Ball Blitz

Ingredients

2 packages (8 oz.) cream cheese, softened*
1 package (8 oz., 2 cups) shredded sharp Cheddar cheese
1 tablespoon chopped pimento
1 tablespoon finely chopped green bell pepper
1 tablespoon finely chopped onion
2 teaspoons Worcestershire sauce
1 teaspoon lemon juice
1/4 teaspoon cayenne pepper or hot pepper sauce
Dash salt
Keebler® Town House Toppers® Original Crackers
walnuts for decorating (optional)

Directions

1. In large bowl combine cream cheese, Cheddar cheese, pimento, green pepper, onion, Worcestershire sauce, lemon juice, cayenne and salt. Mix well. Shape into a football. Refrigerate for 4 to 6 hours. Decorate with walnuts and pimentos, if desired. Serve with crackers.

*NOTE: Soften cream cheese in microwave at high for 15 to 20 seconds.

Ingredients:

3 tablespoons finely chopped onion
2 small cloves garlic, minced
3 large ripe tomatoes, peeled and seeds removed, chopped
2 hot chili peppers, Serrano or Jalapeno, finely chopped
2 to 3 tablespoons minced cilantro
1 1/2 to 2 tablespoons lime juice
salt and pepper

Preparation:

Put chopped onion and garlic in a strainer; pour 2 cups boiling water over them then let drain thoroughly. Discard water. Cool.

Combine onions and garlic with chopped tomatoes, peppers, cilantro, lime juice, salt, and pepper. Refrigerate for 2 to 4 hours to blend flavors.
Makes about 2 cups of salsa.

Chapter 3 was on the coven of witches and it was a very interesting chapter filled with a lot of history and beliefs on Wicca. There was not a ton of information on this chapter that I feel I need to share or even question but I do have a few topics I would like to address on it. First which I had mentioned before the words confuse me and I have come to the conclusion that. She write about her life back in the 70’s so beside dressing funny in the 70’s they spoke funny too lol.

They mention the new moon and how it means the beginning of new things. I am fascinated about this. I have always believed in that kind of stuff. The moon and the stars all having something to do with our path in life.

One of the biggest things I found in this chapter really concerns me and I mean no disrespect to anyone when I say this but I noticed that as they are choosing the circle of woman for the coven that half of them are gay. This got me thinking because I know that a lot of people who are gay believe that they are shunned out by religions like Christianity and so on. (Just to note when I say gay I mean that as a general term). The part that I wonder is that are people choosing wiccan/paganism because the feel like they won’t be accepted anywhere else? If so that is truly sad. I believe that all people have the right to believe what they want to believe and should follow there calling. I don’t think they should say oh well I can’t be Christian or catholic or Mormon because they don’t accept my sexuality and they judge me so I will just say I believe in being wiccan. If they are doing that so they don’t feel guilty for their choices then they still are not where they truly should be. Religion or spirituality isn’t about being accepted or about who will think I am right it’s about connecting with God in the way each individual person does and I think if someone who is in a same sex relationship believes that Jesus is their true god then they have every right to follow that and who cares what anyone else thinks. Ok so enough of my soap box lol.

That is mostly my thoughts on chapter 3. I welcome any comments or advice.

Everything but the kitchen sink

This recipe is something I just whipped up and we loved it.

I called it my very own Veggie Soup

1 pound of ground turkey (you can use beef)
1 can tomato sauce
1 can diced tomatoes
1/2 onion
1 can green beans
1 can corn
1 can peas
little bit of broccoli and cauliflower
2 cups of carrots cut up
1 cup celery cut up
3 regular size potato's cut into small squares

I start with cooking the meet in a pot and I add Seasoning salt, Pepper, salt, dash of Montreal steak seasoning, oregano, parsley, basil, onion salt and garlic salt

I cook it up till its done then i add a can of tomato sauce and 2 - 3 cans of water

I then add all the veggies that take the longest to cook such as potato's, celery, carrots

Add more garlic salt and seasoning salt

Let come to a boil then ad the rest of the veggies, Stir together and add a dash more of all the spices from earlier.

This really is a season to taste kind of soup. I then cook it till the veggies are done and then serve. It goes great with crackers or rolls. This was very yummy.

Seven Layer Taco Dip

Ingredients

1 (1 ounce) package taco seasoning mix
1 (16 ounce) can refried beans
1 (8 ounce) package cream cheese, softened
1 (16 ounce) container sour cream
1 (16 ounce) jar salsa
1 large tomato, chopped
1 green bell pepper, chopped
1 bunch chopped green onions
1 small head iceberg lettuce, shredded
1 (6 ounce) can sliced black olives, drained
2 cups shredded Cheddar cheese

Directions

In a medium bowl, blend the taco seasoning mix and refried beans. Spread the mixture onto a large serving platter.
Mix the sour cream and cream cheese in a medium bowl. Spread over the refried beans.
Top the layers with salsa. Place a layer of tomato, green bell pepper, green onions and lettuce over the salsa, and top with Cheddar cheese. Garnish with black olives.

Chapter Two

I just finished chapter two and WOW. It is the absolute best word to describe what I just read and that is WOW! This chapter goes into the details of Wicca history and what was done to women in the past if they were found out to be a witch or if someone thought they were a witch. I myself had always heard of witch hunts but had no idea how brutal and violent they were. These poor women were tortured to death for what they believed in and what men thought of as a threat. I am glad to live in a time where I can be judged for what I believe but not killed. Being judge is something I struggle with but I do know in the end i can walk away and say the hell with you I will believe what I want to.
One of the first thing that caught my attention in this chapter what how when someone is called an Old Crone that it is actually a compliment. Go figure.
This chapter also talks about not focusing so much on the destination in life but the journey you live. I think that has always been a huge struggle for me. I do that with everything I think such as oh I will diet and in the end I will be skinny. Look at me now still fat so that didn't work. Its the same here with my beliefs I finally realized a huge chunk of what I believe the other night and I am so happy that I must share it with you all. I believe that I can fly hehehe OK not really but that would be awesome. I believe that there is one God and that God is so incredible that he can be anything a man a goddess a Buddha and so on. God can be any form and manifest to each and every person and they need. My example of this would be how Christians worship god and Jesus and the holy spirit that 3 of gods forms and a catholic worship Mary. I think its all so wonderful that God is so great and so Powerful to watch over us all.

I am in love with this book and I believe it is helping me find my way. I don't feel so lost anymore and that is awesome.

Mandy's Chicken Salad

This salad is so good and quick and great for a big party. I use this whole recipe because we have lots of people come to out Family function but can be cut in 1/2 for a smaller dish

Ingredients:
1 head of Green Cabbage
6 green onions
2 chicken breast
2 tbsp accent
1 cup olive oil or vegetable oil
2 tbsp vinegar or 1/4 cup of vinaigrette dressing
2 tbsp Sugar
dash of salt and pepper
2 packages of top ramen

Cut up the Chicken into small piece and boil til cooked through ( I like to cook it in Chicken Broth for extra flavor)
Shred or Chop up the cabbage the and put in bowl
Cut up the onions and add in the bowl with the cabbage
Add the Chicken into the mix and stir around
Then break up the top ramen and sprinkle into the salad
Stir again

In separate bowl put all of the other ingredients and mix them around
once completely stirred slowly pour over the salad while stirring .

I have used both the vinegar and the Dressing and I think the dressing is better plus you can add more for taste. Then its ready to go

Yum and enjoy

Chapter One

OK so I just finished Chapter One in the book of shadows and I sometimes get a little lost but I also really like it. I think the part that confuses me on it are some of the words. The writer uses them as everyone already knows what they mean. Maybe everyone else does and I am just stupid but seriously. Any how I am finding myself really connecting with the book. There are many things in my life that I have always questioned and wondered if they had any meaning. For examples I have some very awkward dreams and sometimes I know they mean nothing like last night I dreamt my husband grandparents yelled at me and told me to get the F*** out and they aren't like that at all. Then I had a dream that a Friend of mine, who I am not super close to and don't see or talk to very often, daughter died. Now I don't believe that her daughter will die but I have had a sense of death lately and wonder if someone close to me will die. I have had stuff like this happen before and then my brother died and then other times nothing happens. I am not sure what this means but I wonder if God has given me a special gift that I haven't quite realized or grasped. I think one on my big problems is caring too much of what other people think. I worry like the author in this book that I wills sound stupid and uneducated or just plain crazy. Anyway that is what I have to share for now. Look forward to reading others comments. Oh and Kristina said she is making us cool book marks wahoo.

The Best Steak Ever

I have to give props to my husband on this and its super super easy but so yummy I thought I would share.

This MUST be cooked on the BBQ to get the best flavor

Take beef steak and make sure its thawed
Use a knife to pokes holes in it unless you have a meat tenderizer and make it tender
Use Montreal Steak Seasoning and seasons both sides of the steak. (Be more generous if you like some spice)
Then cook it till its at your desired temperature we like ours medium rare

Throw a baked potato beside this and a vegetable and you got a meal and its very quick and so yummy

PUMPKIN CAKE

4 eggs, slightly beaten
1 can (29 oz) Libby's solid pack pumpkin
1.5 cups sugar
1 tsp salt
1 tsp ground ginger
1/2 tsp ground cloves
2 cans (13 oz) evaporated milk
2 tsp ground cinnamon

PREHEAT OVEN TO 350
COMBINE FILLING INGREDIENTS IN ORDER GIVEN
PLACE ABOVE MIXTURE INTO GREASED 9X13 PAN

THEN TAKE:
1 YELLOW CAKE MIX + 2 cubes (1 cup) softened margarine and cut together like pie crust into fine meal.
SPRINKLE OVER PIE FILLING MIXTURE IN PAN
THEN SPRINKLE WITH 1 CUP CHOPPED WALNUTS (OPTIONAL) OVER THE TOP
BAKE APPROXIMATELY ONE HOUR
COOL COMPLETELY AND CUT INTO SQUARES
TOP WITH WHIPPED CREAM

REFRIGERATE UNUSED

Super Excited about something new

Ok so I am way super excited. You all know how I have been struggling with my beliefs lately, well my best friend Kristina is helping me to figure that out by us doing a book club type thing and yes right now its just us two but maybe someday we will have more to join us. We are starting with the Book of Shadows by Phyllis Curott. I have decided to use my blog for two new things, one will be for our little book club so we can discuss on here and get advice and comments from others and two will be for recipes. I am always looking for a new recipe and so I will be posting a new one at least once a week and I am hoping that others will post some as I get new followers. Life is like a peach

Hello everyone, I have stated that life is like a peach because I feel peachy and loved and so happy I could burst. Josh and I have been spending a lot of quality "time" together if you know what I mean and it has been so fantastic. Also my babies are moving around like crazy and trying to crawl. Caleb turns 11 next week which is crazy to think I could have an 11 year old child hmm is it possible I am getting older? Nahhhhhhhhhhh thats just crazy talk. I hope your all doing well. I am loving my job and doing great at it and think this is the place I am supposed to be. I hope so they think so too. We have decided to take our family vacation in March and I am super excited for the holidays they will be so great. I am loving my new house and so does the family. All and all life is good.

OK everyone so I am enjoying life so much lately. I love my husband who is so wonderful and kind and sexy and one of the greatest fathers i will ever know. my oldest boys even though they fight all the time they still crack me up and make me smile every day. Then there are my babies two of the most amazing and adorable little babies in the world. I have been so blessed to have such a great family. I have a new focus on life one that i can sadly same i lost track of for a while and that is being the best wife and mother there is. I am really working on it and I have finally started to forgive myself. It just happened Friday I was headed home from work thinking of my wonderful family when that old horrible thought that creeps up on me daily about how i am horrible and how i don't deserve to be happy and just as quickly as it came it finally hit me that yeah i made a huge mistake but i have been busting my ass daily ever since to make up for it and hell i am human. I am loved and i am lucky. So enough with the beating ourselves up over this anymore i am going to sit back and enjoy the family i have been so blessed to have and love life again.

So now onto my new struggle and i am looking for tons of advice. I am starting to gain back some of the weight i lost and i don't want that to happen i worked so hard to get it off but i am so busy with my new job and having this wonderful family that i cant find time to work out and i will be honest i not big on outside because well its cold so for those of you who were going to suggest i walk that wont happen lol. I will take all the help i can get. Thanks a bunch.

Taking the time

As I mentioned before when I started this blog was that I was searching for what I believe. I have the basic concepts of what I believe but not sure yet. I do however know that I do not take the time to find out what I believe. I am so busy with kids and trying to be the best wife ever and working and now I start school soon that I dont even know where to start. I do know that I want my husband to be included in my beliefs this time. He knows what he believes but doesnt practice. I am not saying that we need to be in church 3 times a week but I know that I need to be on the same page as the person I am spending my life with. Any inputs from anyone? I also have been feeling like such a bad mommy since I got my job. I really thought I would hate it and be miserable but it turns out I love it and can make a lot of money which would be great for my family but it means less time with my family. I am lucky because my husband stays home with them so its not so bad. Anyway that is my thought for today. Hope you all are well.

Yes it has been a long time. I am so sorry. My babies were born on June 22nd and they are so cute. We welcomes Hayden and Gannon into the world. I have a great husband and wonderful friends and i love my kids so much. I also just got a new job. Hope everything is going good with everyone else.

OK so not really gone just busy and with my husband home and only one computer i can not get on as much as I would like. Things are going good. My husband and I are reconnecting in the best way possible. I am now 32 weeks pregnant and trying to keep these babies in for a few more weeks at least. I go to the doc next week for another ultra sound and appointment. I feel as huge as a house and I am afraid I look it to. I will try and get on here more often as I am on bed rest. I have been spiritually searching and I think I have found some answers but I will let you know as time goes on. Also I know that some of you have tried to add me on face book please try again i denied it not remembering who you are i apologize. Have a great week.
